How to Make a Tofu Bowl

  3. Prepare the sauces: In one bowl, whisk together the sticky glaze ingredients (soy sauce, maple syrup, sriracha, and minced garlic). In another bowl, mix the Yum Yum sauce ingredients (vegan mayo, sriracha, maple syrup, rice vinegar, soy sauce, and grated ginger). Both sauces can be made up to 3 days in advance and stored in the fridge.
  4. Pan-fry the tofu: Heat 2 tablespoons of oil in a large non-stick skillet over medium-high heat. Add salt and freshly cracked pepper, swirling the oil to evenly coat. Carefully add the tofu, letting it cook undisturbed for 4-5 minutes until golden brown. Flip each piece and cook for another 4-5 minutes, adjusting the heat if necessary to avoid burning.
  5. Glaze the tofu: Pour the sticky glaze over the tofu and use a rubber spatula to mix well. Let it simmer for 1-2 minutes before turning off the heat. Taste and adjust salt or heat as desired.
  6. Assemble the bowls: Divide the cooked rice into four bowls. Top each bowl with edamame, cucumber slices, and avocado. Add the glaze tofu on top.
