Scalloped Potatoes: A Comfort Food Favorite

Is there anything more comforting than a warm plate of scalloped potatoes? In my home, potatoes are a perennial favorite. We have them at least once a week because the entire family loves them. From home fries to baked potatoes, roasted wedges to potato salad, our love for these versatile tubers is undeniable.

We truly adore potatoes!

The Perfect Side Dish for Any Meal

My husband is a true meat-and-potatoes man. Our eldest child, Little Love, is also quite fond of potatoes; I can always count on her to enjoy anything potato-based. Tiny Love, on the other hand, is an adventurous eater who loves everything—especially potatoes!

I, too, have a fondness for potatoes. They remind me of my childhood, particularly my mother, who was a big fan of all things potato-related, like creamy mashed potatoes, crispy roasted ones, and of course, scalloped potatoes.

Clearly, we’re a family of potato enthusiasts.

Cheesy Goodness with a Crispy Twist

This delightful recipe for Loaded Scalloped Potatoes gets its credit from my husband. The first time he made it, I took a bite, and my eyes lit up. They were truly the best potatoes I had ever tasted!

We enjoyed them for dinner that night, and I can confidently say they quickly became one of my all-time favorite meals. Plus, they’re so versatile that they work beautifully for breakfast, brunch, or as a side dish for dinner.

These aren’t your typical scalloped potatoes; they diverge from the classic casserole style with layered potatoes baked on a sheet pan. The result is perfectly cheesy, with crispy edges and a creamy consistency that’s oh-so-satisfying.

Layered Perfection: Cheesy Baked Potatoes

In this recipe, thinly sliced potatoes are spread across a baking pan and layered with generous amounts of cheese. This glorious cheese transforms into a creamy goodness with crispy edges, creating an unforgettable taste experience!

We like to finish these cheesy, garlicky scalloped potatoes with crumbled organic bacon, a dollop of cultured sour cream, and a sprinkling of fresh cilantro.

Cilantro is a staple in our household, thanks to my husband’s background. However, feel free to swap in your favorite herbs like Italian parsley, green onions, or chives if cilantro isn’t your thing.

Ingredients

Potatoes:

  • 12 red potatoes or 10 small Russet potatoes, peeled and thinly sliced
  • 3 tablespoons grass-fed butter, cubed
  • 2 garlic cloves, minced
  • ½ teaspoon sea salt
  • 2 ½ cups cheddar cheese, grated – divided

Optional Toppings:

  • Cultured Organic Sour Cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking pan with parchment paper and set it aside.
  2. Peel and thinly slice your potatoes to about ¼ inch thick. If you have a mandolin slicer, use it—if not, just do your best to slice evenly.
  3. Spread the potato slices and minced garlic evenly across your prepared baking pan. Dot the top with cubes of butter and sprinkle with sea salt.
  4. Bake for 10 minutes. Remove the pan and stir the potatoes to coat them with the melted butter. Return to the oven for another 20 minutes. Carefully take the pan out and sprinkle the cheese over the top. Return to the oven for about 30-35 minutes, until the potatoes are fully cooked and the cheese is bubbling with lightly golden edges. Allow to cool for about 15 minutes before serving.
  5. Top with crumbled crispy bacon, sour cream, and chopped herbs. Enjoy!
