Feel free to swap in butter or all-purpose flour if you prefer, and if you’re aiming for a vegan option, simply leave out the egg in favor of a flaxseed egg. This recipe is incredibly forgiving and can be whipped up in a single bowl, making clean-up a breeze!

Among my favorite additions (aside from rich dark chocolate) are chia seeds and crystallized ginger which provide a delightful flavor punch!

How to Make Cowgirl Cookies

1. Prep

Start by preheating your oven to 350°F (175°C) and line a cookie sheet with parchment paper.

2. Mix the Batter

In a large bowl or a stand mixer, combine melted coconut oil with sugar. Whisk until well mixed, and then add maple syrup and eggs. Mix until you achieve a smooth consistency. Don’t forget to add vanilla extract, cinnamon, cardamom, and a pinch of salt, whisking everything together until combined.

3. Add Flour and Baking Soda

Next, sprinkle your flour and baking soda into the mixing bowl and stir them in until everything is just combined.

4. Fold in the Add-ins

7. Bake

Place the cookie tray on the middle rack of your oven and bake for 11-13 minutes until they turn golden brown. Let them cool on the sheet for 5 minutes before transferring them to a wire rack to finish cooling completely.
